Our hand hammered induction wok creates a wonderful 'wok hay' flavor to your recipes, while working perfectly on an induction range top.
For steaming, braising, simmering, deep frying, pan frying, and stir frying. The nearly round bottomed wok floats just above the stovetop with the help of a non-reactive aluminum wok ring.
Hand shaped from beginning to end. With heat treatment, we create a protective layer of blue iron oxide providing an excellent pre-seasoned surface. Easy to re-season at home.

Selection includes the two ear wok or a long handle and an ear handle. Induction woks are only currently available in 14" diameter, which is the common kitchen size for a wok.
How does it work on induction?
The wok has a rounded, but nearly flat bottom so that it is as close to the stovetop as possible without actually touching it. Yes, it still activates the induction without being in contact, as it is close enough to be magenetic. Induction ranges can produce extreme heat very quickly, which has the potential to warp carbon steel. To avoid warping, this wok floats above the range. This ensures an even heat on the base, and many years of cooking with your hand hammered wok.
How is induction wok cooking different than gas wok cooking?
Gas stove the flames lick up the sides of the wok, so heat is on sides and base of bowl. Induction cooking the heat is concentrated in the 11" of the base of the wok. But because induction can go so hot, you really can sear the food beautifully and then move it over to the cooler sides of the wok as needed.

Our guarantee protects the buyer from any cracks or breakage that may occur over time. If this happens a free replacement in the original size will promptly be issued.

etc. that occur during the production process - these in no way affect
the beauty and function of the cookware. As such, cosmetic markings are normal and fall within our rigorous quality control standards. Our products are living materials and will develop lovely, rich patinas with
use.

Warping can happen with carbon steel cookware. Warping happens when an empty pan or wok is left on a hot stove top. This is not covered in our lifetime guarantee. You can contact us about warping--we can fix your warped Newquist pan or wok at an hourly shop rate. Contact us for details
